One thing I’ve missed the most since going on the Paleo Diet, was Pancake Sundays. Coincidentally, my boyfriend bought a bottle of maple syrup. So I decided to surprise him and start the Pancake Sunday tradition! I jumped online and found a delicious pancake recipe that both of us enjoyed very much. Hope those of you who are gluten-intolerant as well can enjoy a lovely Pancake Sunday.
– 2 eggs
– 1/2 cup almond meal
– 1/2 cup coconut cream
– 1 tbsp butter
Beat the eggs together. Add almond meal and coconut cream to the eggs and mix them together. Consistency should be thick. Add more almond meal if necessary.
Heat up a tablespoon of butter on frying pan on medium high. Place a tablespoon of the mix in the frying pan and flip it over when the mix is starting to dry up. The top side should now be golden brown. Cook for another 30 seconds to a minute and serve with maple syrup!
